I've looked into those bigger air to water heat pump systems that use the same water for the boiler and floor heating, seemed pretty efficient but they're still pretty expensive to get

Sometimes old tech can be useful. I know that the largest cable tv/internet company here in Denmark used to (might still) run an Amiga to stay in charge of the low level systems. If all of the modern hardware had a fit, the Amiga would keep running, rebooting systems as needed.
They had a dedicated technician to keep it alive with new parts. It was just too damn reliable to replace.

for the PSU, you connect EPS 8pin for CPU, and 12vHighFailure or 8pin PCIE for GPU, then 24 pin mobo, thats it
Big 24-pin goes to the right of RAM
4/8-pin with CPU on it goes on the top left
All PCIe cables go to GPU
And SATA goes to disks

Yours does, so use cable from PSU 
And make sure connector is pushed all the way in and secure in both GPU and PSU

usb headers look sth like this. The manual will have a diagramm where they are, there's usually several scattered about so you can pick one in a good location, since you also need one for the cases front panel.

if it's non conductive then it shouldnt be an issue, plus if you only use the recommended amount in the middle of the cpu then it shouldnt spill over

its designed to heat up and cool down a lot of times and conduct heat

Don't worry, just make sure to screw down diagonally as that makes it a lot easier
i.e top right screw and then bottom left
then top left and bottom right
you can always re paste it if it does wrong dont overthink it
That way you don't have one side fully screwed down so that you have to push the cooler down to get to the other side

start by pressing enough to get the screws to bind then alternate screwing them in piece by piece
Place cooler on cpu and then press just enough till screw 1 grabs then tighten down a little and move onto screw 2

Sometimes you need to press down quite a bit, I always try to push the side I'm screwing down, down with the screwdriver and hold the other side down with the other hand
Can be a little tough at first but once the first one is screwed down 50% the other one is easy dw
Good tip for next time you're building: It's a lot easier to screw down the cooler while the motherboard is placed on It's box i.e before installing it in the case. Can apply a little more pressure that way without the motherboard bending all too much
Paste spread looks great you're fine in that department
If you have a second person around that makes it a little easier as well

you wont break the cpu by tightening it, its spring loaded, plus youre incrementing it going top to bottom to top to bottom etc
just dont screw enough to strip the screws

Blue is behind the case and white at the bottom is pulling the wire through a small slot and plugging it in down there.

and the sag bracket doesnt mount to the case
this is the base of the sag bracket system
unless its somehow perfectly in line with the middle of 2 fans, i dont see this working
if you cant get it right in the middle of the fans then you might have to get a sag bracket that mounts horizontally
you can order sag bracket online that mount either to the back of the case or over the fans
one that you screw into the expansion slots
