Balance between specs is actually very close right now for raid. Take whatever is the most fun for you. But if you plan on doing M+ you'll have a much better time playing rogue.

it is a protected buff, which means it purposefully cannot be "turned off" or cancelled, because there's no situation in which you ever don't want to be in one of the two stances
So yeah, just use the macro to easily swap back and forth between them instead

Acceptable in end game is does the boss die with you in the raid. If you cooked up something where you’re doing 10% more dmg than the tank you’re not long for that raid team.

whenever you take bladestorm you're usually taking the talent, "Hurricane", which blocks you from cancelling bladestorm (it's on the tooltip)
but no, you wouldn't want to cancel, because the buff from Hurricane makes it worthwhile

for ST you have the option of picking up Exhilarating Blows (take point from bloodborne).
For AoE, you run the single-bladestorm build, dropping one bloodborne point and putting it into Cleave
