make sure it dry, high heat, and if needed, brush some mayo on it (not so much you see it but that the steak glistens)

salting it overnight ahead of time while air drying in the fridge helps
seasoning, aim for a sauce instead
if you gonna use pepper, use it at last moment because it can burn and go bitter
harder the sear, the more likely you to ruin seasoning, hence the preference for sauces
the salting helps texture too
it a way to faux-dry age a bit and up your quality
I do ribeyes in a dry, hot af cast iron skillet.
Make sure the steak is dry and I bring it to room temp first too.
Sear each side around 30secs, then throw the throw the whole thing in the oven to finish.
~2 mins each side.
Pat of butter with some thyme and garlic in the pan at the last moment.
the room temp is an old wives tale that been proven wrong many times over. THe only reason it persists is because it helps dry the steak if you do nothing else
And I salt it first too
use oil, not butter, finish with butter. Butter inhibits browning
Fridge cold steak produces condensation here, so yeah
so start in oil, do your initial sear, drop heat slightly, then butter baste to finish
Butter is for flavor at the end, not for browning.

But the basics are dry meat, high heat.
And no acids, that inhibits the Maillard reaction.
ironically acids can be benefitical for some longer cooking meats like meatballs
lets you do 100% stovetop without burning

what did you use for the breading? looks like a starch breading, raw picture looks like you didn't just coat it correctly, the cooked picture looks like that too + too low a temp
generally speaking if i am not frying then i am not breading
you can shallow fry some cuts pretty easy in a normal pan
and you can also bake for about 90% the same result

I perseonally wouldn't, a lil' bit of bbq sauce sure works great and gives you leeway on cooking. If you like extra searing on your burger, brush it with a thin bit of mayo before cooking it

Ah, I've seen that done in a few recipes. I tend to not add anything expect salt and pepper to my meat.
I do add various things to my burger mix sometimes. Bacon jam, pickled jalepeno, bbq sauce, depeends

For business reasons I made a cricket field cake
Chokolate cake (circular) with green fondant, some lightish food colouring on top. Then colour some fondant red, put in the middle, make it a rektangel.
Then put some small sticks at the ends of the rektangel, 3 sticks at each end

Honestly that doesn't look good. Looks like overcooked too thin patties that shoulda been smashed style instead. Raw tomato is something I can't eat so I won't comment. The pickleds are stand alone instead of on top of the burger, the sauce on the wrong side because of the cheese, and why not pickled onion insteaed of raw

This was regular bread. It was great, crusty outside, and pillowy soft inside. Held together great, nice chew. Slathered garlic butter on it and ate it all in one night. (Shared with hubby and kids darn it.)

Another from my archives. Home made long risen cardamon sourdough donuts with brown cinnamon sugar, deep fried.
they look amazing
a bit of a bother to make, and if I do it again I'll need to use seperate oil and drain it save it which is a pain but was an intresting chalenge and really tasty. ended out being a week of indulgent breakfasts nice texture too, not dense but substantual, great chew.
not that neat but its really hard to get a loose soft dough loop into the fryer and not burn yourself
I do like using my sourdough culture for sweet things, adds some really good depth of flavour and a bit more complexity. my one regret about moving to the mother dough from a regular starter is that there's less discard to work with

I'm watching a cooking show atm and, I know I'm a purist but every time this baker speaks, this gets worse. I dont think I have ever seen a less authentic or respectfull attempt at sourdough and I once made a loaf using Dr Pepper instead of water.
