but we do ours with ham hock, diced ham, and start with bacon (which gets taken out when cooked and sits out to crumble over each serving)
That's basically how I do mine but I use smoked, cubed shank instead of regular ham, and never tried the allspice.

@weak mantle I grew up near what is called "you pick farms" in which you go in and pick stuff yourself and when done you go back to the shack at the entrance and pay. The farmers would always tell you to taste before choosing. One farmer had some corn that was amazing fresh uncooked right from the stalk.
But I'm different with my ramen I suppose, depending on the ramen I love corn in it.

So chaoshao or charsiu are both correct, for example
And Chinese isn't a phonetic language, so context matters too
My grandfather was well known in the local Chinese community for his char siu.
And he guarded that recipe tightly.
When he was getting on in years, my uncle eventually convinced him to share the recipe, and grandfather reluctantly wrote it all down.
Problem was, it was never nearly as good when uncle made it, and grandfather made sure he knew it lol.
Some years later after both grandparents passed, on top of some important financial papers, we found a weathered recipe.
And as you may have guessed, he gave a fake recipe to my uncle.

I suppose if you want to make an argument for a proper spelling for English speakers you'd use the ones that approximate Cantonese, since char siu is associated with that region.

and then while the egg is just setting, get spatula under there gently to lift it a little so keep it from sticking too hard
