Have mainly been looking at dinner recipe stuff to make my comfort food in ways that are simple and easy to clean. Can’t usually set aside as much time as I’d like to

sharing my udon broth now. no image because i am. newbie level 3 but!!!!
- 2tbsp soy sauce
- 1 tbsp sugar
- 2 tbsp mirin
- 2tbsp miso (optional)
- 3/3.5 veggie or chicken stock (if you have dashi though... use that. i just can't get it in my local supermarket )
- 2 gloves garlic
- 2-3 sprigs of green onion, use the paler part as the broth and the darker parts for a sprinkle on top of the noodles
- ginger to taste
cook the udon if it doesn't come pre prepared, and then set aside as the mixture is made. I reccomend accompanying this with a soy sauce marinated medium boiled egg (mirin-green onion-soy sauce to cover eggs and set until dyed to a deep colour, usually takes a few day so relaly the marinating is optional). i also sometim3es make this with fried tofu instead
pour the soup out, put the noodles in the soup (while I specify this for udon i've also used shirataki noodles as well for it to be gluten free), egg on the side, more green onion on top, and enjoy!
pretty simple recipe all n all, just cobbled it from a few others
makes a broth that serves about 3-5 people if I recall right, with some leftovers
In terms of suggestions for the broth itself how it prepped, I'd add the miso right at end before serving, stir it in then. Give a taste to check if enough then remove from heat
Miso loses nutrition and lots of it flavor the longer it in heat
i've mostly made mine with minimal to no miso, but I will note next time if I try with some more, cheers!
your broth is basically a simple white miso broth
yeah it's so good, it's pretty much what you get with the tofu and greens at japanese steakhouses
if it works it works and you use it in reference to the future 👏
the more i've been experimenting with cooking the more fun it gets
also you can start with some corn and oil, then add your dashi/broth, your tare (your soy/sugar/mirin), finish with miso then finish with butter. White Miso Corn Butter broth.... sooooooo good

i've seen recipes that also reccomend sesame oil, I haven't admittedly tried it though.... don't often have it in house 😔

for a one pan dish, cooking oil would be 1-2 tbsp and by comparison sesame oil would be 1/2 to 1 tsp imo/ime

Upon further research, I think the issue was actually that they didn’t do loaded fries in the bucket size. Didn’t realize at the time. But loaded sweet potato fries are in fact a tasty sin against God.

My wife and I rarely eat the same thing daily / weekly. My wife and I have such a love for other cultures foods we try new recipes regularly so we'll eat everything from Chinese, Japanese, Thai, Vietnamese, German, French, Italian so on so on. Home made potato bread rolls
Very simple. 200g finely mashed potato (I use a ricer)
500g preffered bread flour ( I like whole meal or 50/50 while and wholemeal)
2tsp salt
Tablespoon neutral oil
1 sachet instant yeast (or 150g active sourdough culture)
water to make a dough that feels elastic and pliant
Then just kneed till it passes window paine test on an oiled surface. Form into ball into oiled bowl and rise.
knockout, roll into balls and proof bake for 45 mins at gas mark 6
Makes an excellent burger bun, pillowy soft but robust enough to stand up to meat drippings and condiments. But also a perfectly good general purpose bread.

Bread gets a bad rep, probibly beacse pre-sliced industrial bread is so easy to get.
so long as you kneed right, rise enough, and dont overproof, theres nothing in bread making that isn't in all other cooking (that is to say heat and time in correct amounts.

Fry bread and a Navajo Taco I ordered when I was in the Navajo Nation, each are about the size of a car’s steering wheel
it can be.
I make it the way it was made back home. simple boil, with some salt and a few garlic cloves in the pot.
cooked until stems are tender, then fully drain the water.
It's good with a dash of wine vinegar and olive oil
May still not be for everyone, but if you like it it's good and very healthy, specially on vitamin K they say, decent protein and iron as well

I can eat cheap I'll try it
But almost always it's an attempt to grab my money for little to no effort. Like I wouldn't know. But a good chef knows to cut against the grain not with to reduce the toughness, just small things that really bring out the flavor. When they put the love. And the hard work in idk you can just tell. And it's always amazing. I can literally taste when someone is lying to me tho. And I have 0 appreciation for it. I only have 2 comforts in this whole world, food and company. You best get the first 1 right. When I so desire the taste of home as you say, and if it isn't home, I want to taste the same as they perceive it. Otherwise I get mad.

What worse is the price for what they present, beauty doesn't define flavor. Keep that in mind when you eat. It's like a lovely lady. No amount of pretty can define what's within and it's mostly garbage if I'm being honest very hard to find both, very hard
As i'm getting older, all too often i find that i go out to eat and spend a lot of money for food that most of the time does not taste as good as when made at home.
So i have become a lot more demanding when it comes to restaurants too, and most of them have not been cutting it for me for several years
Yeah. Which is why I too opt to just cook for myself the family and crew. I love to do so. But when the reviews tempt me I have to try it, sometimes just to mix it up. Because I have a very specific style completely bias to my background. I can only present the taste of where I come from best

the steak was not a good cut, the cooking wasn't done done medium rare like i asked, and it looked like that steak had been tenderized with a baaseball bat

Imagine eating bruised meat? Doesn't even sound appetizing
That would be my best guess.
But a good steak cut should not need you to beat it at all anyways

im curious on these salsas, it's not something i've seen before

Its a black bean salsa the recipe for i wouldnt give freely, nor my gaucomole
, the red Onions and jalapeños is mixed with vinegar, habenero lime and sal. Very simple. Needs to sit to soften for sometime without being to hot or cold, will become the base for other salsas later, and makes a great topping atm as is. The red salsa is just standard salsa tomato chile, soranos, jalapeños, yellow onion, red onion, garlic (clove), salt pepper, lime, tomatillo, cilantro, some butter and literally almost no oil at all.
I forgot the nopalittos btw👆I was snacking on the salsas, before pics were taken, as were others. The first thing made every time is the salsa, with some chips as an appetizer and later as topping por ti tortillas y carne.
