made braised dim sum style chicken feet for the first time today. theyre so good. online asian market was selling them raw/frozen and id wanted to try them ever since i saw them for the first time at a SoCal dim sum place a few years back.
success! spoiler tagging because they are (very delicious) claws. braised in lots of minced garlic, ginger, soy sauce and oyster sauce, sugar and saké, toasted sesame oil. the high gelatin content made the sauce solidify near-instantly after the braising process, unfortunately it cooled a lot in this image so the gelatin has stiffened quite a bit so its not as pretty as it was in the pan, but theyre so tasty :)
its like if eating chicken wing flats were more difficult, but the high gelatin content gives it this very smooth quality. very melt-in-your-mouth, and the sauce has cooked very well into the meat. i have two more servings to cook, so im thinking about making a miso/saké/brown sugar sauce for one batch, then a crispy chili sauce for the last batch :D

i have made this a few times, I used pickle juice with milk instead of buttermilk
I think it tastes better with pickle juice and milk... I used double the spices which was recommended for stronger flavor
and the longer the chicken sits in the milk the better, so tender and juicy

While that is often true, it isn't always. There is a misconception in how your body processes fried food, and usually only becomes a health issue if that is your primary diet. Frying can actually increase the effective nutritional values of some foods

Lots of food. The reduced cooking time of frying means maximizing the absorption factor of various nutrition. The caloric addition is actually extremely minor (and pretty much non-existent if frying non-breaded like chicken wings). The only real health thing to watch after for normal frying is the increased carbs if that affects you, from the breading

yeah normal frying of potatoes itself isn't unhealthy. The health issue comes into play if that all you eat. The only disadvantage to frying potatoes is an extremely minor increase in calories (by an amount that would not affect almost any diet outside of if you doing it shoestring style). It does however increase the amount of Vitamin B6, C and Magnesium you can take in from it
A lot of the misconceptions from frying come from the way they did the studies. They associated additions to the fried food as part of what frying is attributing, rather than just looking at frying
Yeah bio-availability often gets overlooked.
Does cooking itself destroy nutrients?
Sure, but that's often offset by much greater bio-availability.
It prob also depends on how you cook certain foods, how long, and what you cook them with.

My favourite potato dish: stir-fried matchsticks of waxy potato with Szechuan peppercorns, a dried chili, some soy sauce, and dark vinegar.
I definitely cut these too thick, they’re better done with a mandoline.

You rinse these matchsticks with tap water (or lightly boil them with some baking powder if your water’s not hard enough) before frying.

I'd try to learn healthy snack recipes. So I'd prob resort to YouTube.

My cousin's son is a very picky eater. And allowing for an unhealthy diet's not necessarily the best way to go. Since kids need important nutrients to grow, and have a healthy immune system, etc. I'd prefer to teach them about proper nutrition at a younger age. But being creative with workarounds. You can always trick healthier foods to be more appetizing to picky eaters.
Sounds like a great opportunity for both parties to learn about cooking and new foods.
I disagree with this, but only in parts. Nutrition is extremely complex (the complete misunderstanding among RD and RDNs alone of how carbs and metabolic pathways work a great example). Kids are not of the education to get how it works. Instead it best to expose them to as much as you can so they potentially dislike as little as possible so when nutrition becomes more important in their life (it doesn't matter as much early on), they can adjust without fuss
Lemon Butter Pasta (and some peppered chicken thighs if you want meat) is one of the easiest most liked I've seen for everyone I know with kids
I don't think anyone would suggest that kids learn the Krebs cycle etc.
Basic nutrition principles are not complicated, and in dire need in many parts of the world.

i'm prime example of opposite of this. I was SUPER picky as a kid and after going through a couple moments of near starvation and then being stuck in a part of south east asia in which I couldn't be picky I had to eat what was available I came back as an adult with a far wider pallet and what was once an un willing to try new stuff or enjoy new flavors, I now try everything excluding very very few things but only due to belief system or allergies

There would definitely be, some distance from home, but nowhere I can just up and drive to. Like some nearby national forests are teeming with mushrooms and berries, but outside of some invasive blackberries I’m not comfortable ID’ing anything enough to eat it and I don’t know what’s legal to take. Maybe someday though

cinammon is hydrophobic, so you need to make sure you either stir the fuck out of it (coffee frother is ideal) or pass it through a sieve

It was also the only part of dinner that was actually cooked so that was nice
Thin boneless stuff cooks really fast, so you can get away with higher heat/low times.
I use texture for something like a steak.
For thick roasts etc a thermometer is best
If it wasn't pink and tasted good, no burnt taste, it was well done.

so that pizza I posted last was a trial for making pizza today for friends and it turned out even better! Sausage, Pepperoni, thin sliced onions and I buttered herbed the crust after it finished!

I made what my wife calls "Hug on a plate" its a combo of recipes I mix between the meat gravy mixture from something called S.O.S. "Stuff on a shingle" my dad made as something he brought to the family from the military and I mix that recipe with Map Tofu a chinese dish. Though this doesn't have Tofu it has steamed rice, green onions, and chinese chili crisp on top.

Its a lot of "Pinch of this" and "Dash of that" but combining the two "recipes" of SOS and Chinese Map Tofu. I make both dishes with ground beef. SOS in my family has Cumin, black pepper, garlic powder and garlic salt. Mapo Tofu has sichuan pepper corns, fermented bean past called Doubanjiang or 豆瓣酱
I combine those spices and use a corn starch slurry to thicken.

Even after living just a few miles from Wisconsin for a while, this is the first I've heard that they have their own method. Very curious what it is now
That's what I was taught the name was, but it basically a combo of methods. You put the brats (or whatever sausage honestly) into the pot, cover with liquid of choice (beer, water, a stock/broth, whatever, a mix of whatever you want really). Over low heat bring to a simmer. Once it hits a simmer they good to go
let stay at a simmer for like 30-60 seconds then they done. Take them out, let rest a few, pas dry, then into hot pan or on a grill to finish off the outside
I made Kimchi fried rice with sausage, kimchi and more. Doesn't look like much but its packed with flavor!
Pre sliced swiss cheese from the grocery store. Now getting smoked. I'm gonna try a stack of sliced pepper jack next. Sammichs' here I come!

Basically, it’s a stew made with kimchi, gochujang, gochugaru, and soft tofu, made with a dashi-like stock (I literally used dashi to make mine) and served with an egg on top.
I added daikon (possibly too much daikon) and mushrooms to mine.

I know this is someone else's recipe but I've been using it for 15 years or something I absolutely love this chili.

You can swap out so many of the ingredients like the meat with other meats to your liking and even when you make it with the cheapest of the cheapest ingredients which is what I had to do for a very long time is still taste excellent.
And it's one of those recipes that the longer you leave it the better the flavor gets.

I went to bed early, sorry for the late response, but basically you don't have a need to stir it, you have even heating, and because you can hold a more precise temp thrughout you'll cooked down the meat better (especially if fatty). I re-read the recipe, I'd also fry off the tomato paste before adding all the liquids, it'll give it a richer flavor

That looks great, if you like to do that kinda pizza (thin-ish, simple toppings, no major sauce) look into Lahmacun. The dough you can have done in 30. Cooks up quick, handles whatever you want to throw at it. Can do leavened or not too
Teppanyaki or yakisoba! It’s a dish pretty similar in concept to okonomiyaki, a cabbage and stuff pancake. I didn’t have cabbage, so I used baby bok choy.

its my kinda mix of bagulgi beef and japanese curry lol I was hoping the beef marinated in a similar mixture of sauce that resembles bagulgi and then making that beef into a japanese influenced curry was good. and sure nough the experiment is DELICIOUS!!! served with ginger steamed rice and broc

So, this isn’t exactly something that I have already done, but I’m going to post it: when I’m finally home from vacation, I’m going to make a dish called gamja bokkeum.
For ingredient prep, you have to peel a waxy potato, and then cut it into thin boards, about 1/4 in thick (a mandoline is a great help here), and then cut it into matchsticks. You can do this in one step if you’re strong enough to cleanly force the potato through the mandoline with one of the matchstick attachments, but I’m a fairly weedy trans girl, so I just make those matchsticks with a knife. You also have to peel and matchstickify a big carrot (same dimensions as the potato), and cut maybe half an onion into thin slivers of a similar width. You can also add in a few scallions, cut on a bias all fancy-like, and peel and mince some garlic for some excellent vampire-repelling flavour.
To finish, you add some toasted sesame oil (maybe a tablespoon?) and some toasted sesame seeds (also maybe a tablespoon? I don’t have my fave cookbook with me to give me a good baseline measurement.)
Of course, as this is a stir-fry, you need a bit of oil to start.
And a skillet!
So, there’s some extra prep with the potatoes: you just have to rinse them with tap water in a bowl until the water comes out clear.
Then, you dry them. I like to put them on a smooth kitchen towel and fold that over those matchsticks.
For the actual cooking process, you add in a tablespoon of cooking oil to your skillet, and wait until that heats up. That’s when you add the minced garlic. Keep that moving with your spatula for like ten seconds, and then add the potatoes. You’re going to want those to become a bit transparent before you add in the other veggies. (You probably want to cover the skillet with a lid for 2-ish minutes, to let the veg steam) When the onion’s softened, you add the sesame oil, and mix that all up so it’s nice and evenly coated, then transfer to a serving dish and sprinkle with the sesame seeds.
Edit: Oh yeah, also grind some salt and pepper over it!
