Personally I'd do a quick pickle of the red onion on one burner while you crisp up the hot dog on the other, while the oven heats up. Then combine, top with cheese (or mix in the cheese) then into oven till just melted

it wont get thicker but it absolutely will explode if you don't put some kind of fermenting airlock on that. You are essentially making a form of Mead fermented Honey wine and it will build up gas rather quickly.
if bad bacteria build up in that because of improper seal or airlock system it can actually become very dangerous to consume. Please be careful.
every time you take the lid off during fermentation you are giving moments of bad bacteria to potentially get in there during its fermentation process. This is why when fermenting most don't touch it for weeks and have an air tight seal with an airlock on it until that is no longer a threat
you'll know if it goes bad, it smells like death, otherwise it'll smell like fermenting wine and thats a good thing ^_^

Dice two cloves of garlic and cook in saucepan with a little drizzle of olive oil. Once the garlic cooks down add in one and a half cartons of heavy whipping cream (32oz) and stir slowly to prevent burning, bring to simmer. Add 2 - 2 1/2 cups shredded mozzarella cheese and stir until completely melted. Chop 1 bundle of spinach leaves decently but it doesnāt have to be fine and add to sauce. Continue stirring slowly until desired thickness is reached and add salt and pepper to taste.

you could have some sort of non-meat-based burger, there are veggie patties one can buy or make that taste quite good. they do not taste like meat burgers (nor should they) but they are good in their own right
