As a very new player (bought the game a couple days ago) I've just been following through the quest line in normal mode.

When do you recommend I get started on expeditions/starting a new save (selecting expedition from menu)?

I noticed these expeditions are seasonal(?)/time limited so I don't want to miss out on content but at the same time I don't want to ruin(?)/rush through the story/gameplay that much.

no, basically the game will keep your story progress and allow you to swap between the story experience and expedition at a terminal at the anomaly next to the quicksilver companion. both experiences remain independent of each other, aside from being able to send over a few things to help yourself out in the expedition from your main save. once you're done with the expedition you can claim multitool and corvette (literally copy over to your main save from the expedition save, via the same terminal)

oh and once the expedition ends/expires what loot/items I get in that subsave is transfered to my main one without interfering with my main questline?

don't think you can, only way I know of to increase tech slots in a ship is to find an upgrade for it, or buy with credits in a ship salvager

I mean it IS a glitch I think? You just add a bunch of modules to your ship till it fills all of your tech slots, then you remove one (or as many as you need) to free up a tech slot, add a tech, and then place the module back. By adding the module back, it forcefully increases the tech slots so they can hold the modules, but then if you remove the modules again, the tech slot stays. You can rinse and repeat
