When I was working in a hotel that dealt with US customers, we told them we could take USD but we could not convert USD so if they paid in USD, they would be paying 1:1

Then we'd take the US currency ourselves and get it converted, then skim off the difference as profit.

That way US customers would be inclined to either get their money converted like they're supposed to or lose the difference in the exchange
