I dont think anyone would reasonably disagree with the idea that not all content needs to be raid boss level exciting, however I do think that there is a baseline of engagement that needs to be met for something to be considered enjoyable by a majority of players, buff rooms already serve as a pace reset between rooms so saying that the content itself should be intentionally slowed down for pacing seems redundant, raid rooms themselves are also already at a much lower level of engagement than the bosses themselves and that is understandably by design.
The place that people will disagree with you is your definition of engaging isnt the same as most players, wynn has lightning in a bottle with its combat system and most people play the game to experience that fantasy, not to do things vanilla related, things like parkour being core gameplay related in repeatable content is not something many people like because it feels more like something to get out of the way to get to the fun stuff again instead of something to be enjoyed in and of itself. In alot of ways Astal defense feels the same way, it is insultingly easy to most people, doesnt utilize the spell cast system, and eliminates all agency for room completion from the player who takes it, this is an incredibly boring gameplay element because to alot of people it forces you to stop playing wynncraft for the 2-3 minutes it takes to finish on an average run
People (myself included) flock to defend arbitrary tech like defense delaying because its high risk, high reward, and highly skill expressive, it gives back to this room what so many players desperately want which is excitement, youre right that its logically inconsistant with the idea of the room to keep but if you want to improve the room/not make it worse, at least taking into consideration the spirit of why things like parkour skip and defense delay are so liked to begin with would already be a good start for improvements
