Yes, you feed them materials to raise their stats, then use them to train those stats. Once all the stats are maxed, you can breed 2 horses to raise the max level you can train to, or keep feeding it whatever to replenish it's energy.

Yeah, if it runs out of energy, you can still use it, but it's slower, and it can't be trained. Each food you feed it replenishes 50% of it's total energy.

Max level (115 gathering+) tier 3 mater are very expensive and a good way to make money
Low level easily farmable ressources (wood low enough you can cut down trees in one hit) are fine too at lower levels.
Finally, specific ingredients that are byproducts of gathering can be very worth it (some strange burnt wood at lvl 80 woodcutting, and Voidgloom at lvl105 farming)
Overall to my knowledge the best ones are lvl 115 tier 3 mats and farming Voidgloom at farming 105 for Remnants of the Ruined (you need a good route!)
