The hearts are just about friendship up until you do extra stuff so it doesn't hurt to keep befriending her either way. The hearts only go away if you stop talking to them for a while so again, there's no urgency to commit to anything or stress about it. ^^

It's up to you. If you have the Oil Maker already, it's worth processing basically always, with the niche exception of it being Iridium Quality while you don't have Artisan. It's not a huge value bump though so if you don't have one, I wouldn't stress.
