you can duplicate gems with it, and there are some gems you want to have a lot of (e.g. jade) as it can help with your trip to the ||skull caverns
trade jades in the desert on sundays for staircases; or trade rubies any day to get spicy eel which gives +1 speed and +1 luck||
but if you are close to CC completion, then there's no harm in holding onto the iridium bars, as 5 of them are needed to unlock late game stuff

if i'm in this situation i'd buy fiberglass and use remainder for strawberries, u can live w/o the upgraded backpack and pickaxe (just slightly painful)
and fiberglass can greatly speed up money making, which u can then use to buy backpack and pickaxe

when you are processing them (to make more money), crop quality doesn't matter
