There is an event that occurs during summer. This event will make it rain green, and strange plants will be all over the valley. I recommend breaking/scything as many plants as you can, and a lot of strange trees will have moss for you to collect.

Alternatively, trees grow moss as they get older without you cutting them down. This method takes a lot more time tho, and I don't recommend

If you have enough kegs to process all your crops, you're just making more overall money
