Mushroom logs are pretty rng reliant in how they work, since the type/ammount/quality of mushrooms you get depends on the Type/Amount of trees near them. Additionally, more rain=more shrooms, since it makes them produce faster. So it's pretty hard to actually say.

Day 5 also pay a visit to the mines

Actually Joja makes a contract with him and he tries to get out of it by sending you the letter i been checking multiple times but my theory is the letter you found was actually for ||mr qi|| because it was at your company office so you decide to come in and pretend to be the farmer and everyone plays along because you agree to fix the town for free
