Fully grown trees will spread seeds though as well, so you can dig them up around fully grown ones

however each item from a different category gets you +5 points

so if you have say 6 different categories that's a whopping +30 points

diversity does actually matter but you can win without it

I love minmax, like that's always my endgame in anything I play. I love the ratios/statistics in any game that offers them. But I try to figure it out on my own first, playthrough the game, come up with my own theories, then check it against the community's established math. The process of discovering what's optimal is more important to me than being optimal, if that makes sense.

Starfruit wine,
Ancient fruit wine
Pale ale (Not reccommended if you have access to the above crops)

the "easiest" path is to rush mines in spring while getting farming level 6 to then have quality sprinklers for summer and fall and sell raw berries by the hundreds. Mass coops or barns are also good or very good but require somewhat more handling as cow and chicken produce daily (with better options unlocking later on, even low maintenance dino + treasure appraisal guide)

Consider how much free money you have. Barn is better, but not only is it more expensive, cows are also almost double the cost of chickens and you still need to buy the milk pail to milk them.
Also check if you've already unlocked the cheese press recipe. If not, I'd start with coop and make mayo to sell.
