I've just done some math, and it looks like as long as money is your limiting factor (i.e. you're willing+able to till and water more spots), wheat, beet, and parsnip are the best crops in the game -

• Beet:
  You buy it for 20g and sell it 6 days later for 100g. If you spend all your money on beets, then you're multiplying your money by 5 in 6 days, or effectively multiplying your money by about 1.3 every day. I think no other crop in the game beats unprocessed beets by that metric.

• Wheat:
  If you jar it, it multiplies your money by 10 in 7 days, for a 1.39x profit margin per day. If you keg it, it multiplies your money by 20 in 7 days, for a 1.45x profit margin per day.

• Parsnips
  Parsnips are 1.15x per day unprocessed, and 1.29x pickled, but they're plantable in spring, so you take what you can get.

Once you run out of space, that's when you want to switch to Starfruit or ancient fruit or whatever
