as for mining, i think focusing on gems (ex: emeralds, rubys, jades, etc,.) would be great. save these up as they'll be handy later on. ofc as you do these things, you'll gain access to sprinklers, furnances, etc,. which i think you should def utilize. i think u can def unlock more items once u reach lvl 10 in one skill at least by the end of y1

mmm ok. i personally think u should prioritize farming year-round. most crops are very important (both for community center & for money). if it takes up too much of your energy, don't stress, you can use your leftover energy to run around and forage! however, if you seem to progress further than usual, i suggest going fishing next. fishing is usually easier/less overwhelming than mining for most. when you feel more comfy with getting fish / gain access to food, head for the mines! i usually keep mines till last cause its easy access + its always there for you while farming / foraging / fishing is seasonal.

The wiki lists xp by crop. The more expensive ones are usually the ones that take the longest to grow and give the most XP. However, the ones that regrow over time are a bit more consistent and you can usually get similar or more exp from those.
