To get coal one of the best ways is to kill dust sprites. While you are killing dust sprites you will find an abundance of iron. A lot of things require copper and you probably won’t want to waste all of your time on the lower level of the mines so I would save the copper for other things.

That's entirely personal preference. I'd definitely recommend playing vanilla at first, and then branching out to mods.

Well with the npcs robin will give you a good recipe for 6 hearts I believe (pumpkin soup), the old man will give you the recipe for spicy eel at some points but don’t quote me on that. Also some of the romance able characters have good dialogue as you gain hearts so it can definitely be fun do build relationships.
