forest is nice since you get early hardwood

This really depends on the experience/perspective of the player. Experienced players can probably wait until quality. But for new players level 6 farming + Floor 80 might actually feel like a big goal, and can take multiple seasons for them.

Even myself, as a very experienced player, opt for Basic Sprinklers for my strawberries, because the time crunch of going for Quality that early is just too tedious for me.

It's not really a waste of materials, you're just spending more time getting COpper, instead of Gold/Quartz.

the farming level comes pretty naturally imo.
mining also doesn't take that long, a copper pickaxe is already enough for 80 floors of the mines imo. if energy is your problem then leftover crops can be useful, that or salmonberries, field snacks, mushrooms and possibly foraging that they come across
the copper and iron can be used for processors and farming stuff, such as tappers, cheese pressers, kegs and such.
gold and quartz doesn't have as much use in contrast

The amount of abysmal farms I've seen people post on here/reddit has taught me that what you think of as 'naturally' most certainly isn't the same for everyone.

Despite being used for more, copper is easier to obtain... especially, again, for new players.

Eventually players will get to a point where they have excess time anyways, which is when they can make up the 'lost' time of using their copper early.

The winter forage crops are extremely lucrative, so if you want to keep on "farming" you can do that. If you want to take a break from crops, winter is a good time to get deep in the mines (since you can dedicate all of your time/energy to it each day). More time in the mines means more ore acquired for upgrading your tools and/or building sprinklers and other useful things around your farm.
