If you don't plant/sell the strawberries in Y1, you've basically wasted all that money buying them from your first 2 weeks, as well as left your fields empty the rest of spring Y1, which makes your Summer worse as well.

Saving a few berries to seed-maker later is fine, but you absolutely want to plant all of them, and sell most of them.
