Starfruit is better than Ancient Fruit profit wise but some people prefer Ancient Fruit do to it not having to be replanted

Forage resets on Sundays, so go out searching on Saturdays.

Same as any other crop, once it's fully grown you can harvest it. You harvest it with a scythe, rather than pick it though.
