Depends on your current money needs and experience. I personally always buy like 10 full stacks of Wood, and stone in Winter during Y1 on my farms.

The great thing about stardew valley is that you can go at your own pace! You could sleep in game for 8 years and do nothing with your farm and you'd still be able to be productive and reach 100% completion. Wherever you're at in the game is as good as any other place in the game that someone else could be. Take your time, and people will be here to help you if you ever have questions 💜

There's a lot of late game content to explore (and new stuff coming with the next update), but there's of course a limit to the actual storyline and whatnot
You can still play for however long and find interesting stuff to do, but at some point many many in game years in you may come to a point where you want to start a new save and try a different storyline or focus on a different goal

There are 2 versions of the fish quest, one which just asks for fish from an area (ocean, lake, river), and one that asks for specific fish. The specific fish one is random, so it's unlikely going to be Sturgeon again.

The other two options for that fish quest are 1 jelly or 1 pickle, both of which are super easy since processing stuff in a jar is really quick
But if you don't already have 1-2 maple trees tapped you might just have to sit on that quest for a while
