I've done challenges for myself in the past to make the game fun... I once had a maximum of a 5x5 (1x iridium sprinkler) garden outdoors. Was only allowed to plant 24 crops up until I unlocked the greenhouse...

also done other things like.. I can only sell stuff the last day of the season, or I am only allowed to leave the farm on mondays etc

Yes it can, theres many mods that edit the play style. For instance, I have a mod called "automate" which allows me to check my chests anywhere i am, and have my machines automated for me. Its also customizable, most mods you will find are customizable to what you want out of it.
