Money in the game is a way of keeping score, really. And reaching certain scores unlocks certain things that make the game easier in a streamlined sense, less grindy.
It's why I advise people to spend their money on things that can make them more money.
Mining is for resources to craft things that can make you more money or make your game life easier. If you sell all those minine resources for quick cash, it's a trap that gets you stuck and unable to make any real progress.

Yes. It's good in that is provides nearly full healt and energy by just eating ONE. Other foods people like to eat, like salads, require two or more to get the same effect.
Early game I like to gather as many salmonberries as I can find on Spring 15-18 and eat those. Allows me to sell my cheeses early when money is really tight. The mushroom cave is also good for that, as common mushrooms are plentiful.
They're going to nerf the mushroom cave in 1.6 and only give mushrooms every other day instead of every day, which really sucks.
