For grass, you just need to open the coop door and hope they eat the grass on your farm. For hay, however, you can either buy hay from Marnie or get a silo and scythe grass on your farm to get it. You will have to place it on the feeding bench though.

Fruit bat and mushroom cave are both really good early-game dependent on what you are looking for. Bats provide fruits occasionally which is good for community center and gifts while mushrooms give good early game energy and some profits. Both become obsolete by mid-game, so your choice doesn’t matter much.
