I forget for kegs/preserves, but for casks, you should really only preserve star/ancient fruit wine and goat cheese, in that order. everything else makes less than half the profit per day that goat cheese does

No. That 50% is mulitiplicative, not additive. So that 50% extra turns the 2% crit chance of most weapons into a whopping 3%. It sucks without the right build and weapon.
Go for the guaranteed extra damage (and extra hp along with it).

You can change back later when you get the necessary weapon and build.

Not really.
Juice takes 4 days to make, pickles take 3 days. Pumpkin juice base price is 720, while pickles go for 690. Sounds better to make juice, right?
But every 12 days you make juice, you are getting 3 batches for a total of 2160, while in the same 12 days you can make four batches of pickles for 2760.
Add to this fact that all veggies except pumpkins and red cabbage are actually worth less as juice than pickles, and this is why I say you should never make juice.
