You can plant them all at once. They will all grow at the same rate. They only fruit in their season, but they don't die after that. They just go dormant until that same season the next year.

If you upgrade coop twice you can get rabbits which are awesome. They give wool and rabbits foot

Pigs also grow slowly. Truffles are worth a lot, and truffle oil even more, but cows are cheaper and grow faster, and cheese is useful. I would start there, personally. Totally your choice though.

Money is very slow at the start. I work on the community center hard because some of the prizes are really worth it, like the mine cart and the greenhouse. And it will take a minimum of a year to finish it. Into winter of your first year, anyway.
