You can miss specific penny event decorations, you always miss either the community center trophy or the joja cola machine depending on which route you take, and you technically have a bunch of one time items you have to give to npcs for quests (like Robins axe, the pirates wife trading stuff, etc)

Both professions that add value to fish also add it to the smoked fish, making them even more valuable. It is very definitely worth smoking the more expensive fish.

Break-even point, if you value coal at 250 in year 2 and beyond, is any fish worth 225 if you have Angler and Artisan. I've set 300 as a "worth my time to smoke" level.
But smoking lava eels is crazy good.

Lava eel bait is so bad. Even with the rare fish bobber, it is impossible to reach 20% chances.

And it almost three weeks I've gotten roe a grand total of three times between them. Sure, it was 9-10 roe each, but the frequency sucks. Still no table for Legendaries in the Wiki.
So those videos that show them getting 20 roe with an animal cracker? I don't think it's every day. I'd be happy at this point if I got it twice a month, but I'm still waiting for a second harvest from just ONE of those three ponds.

I had a variety of fish, ingredients fish for Lucky Lunches and Seafoam Pudding (that's 4 different ponds right there). I redid them to double up on both lava eel and blobfish, two ponds each, while only keeping the sturgeon pond out of the rest. So it's two each of lava eel and blobfish, sturgeon, and the three legendaries.

I got rid of the ice pip, too. The output sucks.

Legendary roe is rare, but when you do get the legend and legend 2 ponds hitting 14 or so in one go, it feels so good. I have one for each legendary and their Mr Qi counterparts, And I've always got a fair number of them processing.

I read it as much worse than that. 9% chance of getting something from the drop table. And the drop table is 60% nothing. So that lowers your chances overall to about 4%. Or less than 4.5 roe days per year.
I hope I'm wrong. I probably am, but that's the way I'm reading it.

Lava eel is an average of 2 roe on harvest 75% of days at max which is around the same g per day
