Yeah this is a known bug where if you put in any colored object (like Roe, Targeted Bait, Wine, etc.) in a shipping bin the default color will be shown during the animation when placed. This will be fixed in the next update (1.6.9).

If all 5 fruit are no stars, just selling them would be 825g x 5 = 4125g which is a profit of 2125g over the seed cost
If you dehydrate them it is 7,910g which is an increase of value in 3785g over just selling them, and a total profit of 5910g over the seed cost. Considering just the upgrade from just selling them (this is the benefit dehydrator is giving you) that is 3785g/day
If you make the 5 fruit into 5 wines that is 5 x 3150g = 15750g. That is an increase in value of 11,625g over just selling them. Total profit over seed cost is 13750g. 11625/7 is 1660g/day. however you also have to think about your labor, i like being able to only deal with the kegs once a week instead of having to do something daily. and if you put the wine in casks you can triple the value without much labor

Assuming no fertilizer bc I'm lazy and don't want to look it up. Selling no star 5 fruit at 4125g, 2125g profit over seeds, to 13 days to grow is 163g/ day profit. Will be more with stars of course

Putting the seeds in the dehydrator for profit of 5910g over seeds at 13 days grow plus 1 day dehydration is 422g/ day profit
