Every time I'm struggling I just hold Bing Bong in my arms and then all those worries instantly go away and I throw myself off the ledge knowing that I won't die alone so long as I have Bing Bong held tightly in my arms against his will.

Mushrooms are only found in the first 2 biomes so just hang around and explore as much of them as you can. Every run is not guaranteed to have all of the mushrooms you need so there's a little bit of RNG involved

That little bit extra stamina they might give isn't really worth it most of the time; as you either play in a way to cap your stamina by the time you reach tropics or you play in a way where you directly use up the extra stamina
At least that's my experience
