Yes you can. You can only have 2 embellish but you can craft all the gear you want as long as you have sparks for it

If you're going to use the crafted one in offhand I would not recommend it, but for mainhand if you're not doing mythic vorasius it's prolly gonna be better than any other slot, if you are doing mythic vorasius already then I would sim every crafted item (might aswell sim the dagger too for the hell of it while you're at it)

Honestly, every time I watch this race I’m reminded how much harder Classic raiding actually is. There’s just no comparison. Retail bosses are basically dance routines with training wheels while Classic forces you to actually understand your class. You can’t just script your way through in Classic, you actually have to play. Half these Retail raiders wouldn’t last ten minutes in old Naxx without WeakAuras and Max telling them what to do. It’s crazy how far the skill floor has fallen
