tbh a comparison like that isn't really fair. In one corner you have a high end GPU from 2017 and the other an upcoming entry level card. I'll probably just get the Radeon RX 7600. Not much of a PC gamer and I'm only on 1080p without ever planing to upgrading that for my desk.
I'd just like to play fps games like Starfield with Mouse + Keyboard and future proofing for Multiplayer with friends. Aside from that I only use PC to mess with mods sometimes.
Games like Baldur's Gate 3 even still run on my current system, got it as a gift on Steam before it hit Xbox so I'm playing it there. But having that in prettier would be great too.

Kinda insecure about it though since I've always had NVIDIA cards for all my life. But in my region they are just so damn overpriced, I can't justify one.

You should be able to reinstall the system software through recovery mode. All your games, save files and achievements are automatically saved on your account, so even if you format the system you shoudln't lose anything.

I think AMD should have just stuck to the naming they had and could have even looked at bringing Ryzen and Radeon in parity where up to a Ryzen 7 9700X or 9800X3D would often be deemed enough for the gamers there could have been a 9700 XT or 9800 XTX to match such a configuration with something far crazier (dual chiplet GPUs) under the 9900 XTX and 9950 XTX naming, just like the 9900X and 9950X. Though it seems dual chiplet GPUs may be a dream for now as AMD mentioned something to do with higher costs preventing them from being able to do something like that or we maybe could have seen Ryzen/Radeon play out like this

would say it is good yeah but off the back of the issues Intel have had over the past year I'd be somewhat wary of their CPUs. Not that it should put you off or that too much

Assuming you can avoid all the issues associated with 13th and 14th gen with the bios update then it’s fine, similar to 12900K if I remember. If buying now though I wouldn’t bother with Intel at all

I thought 8 cores would have been recommended for most games these days? (13700K/KF having 8 P cores vs the 6 P cores the 13600KF has)
