The default leveling path from 10-50 is questing in the Battle for Azeroth zones of Kul Tiras and Zandalar. When you make your character and first leave the Exile's Reach starting tutorial zone, follow the quests given to you at your capital city and you'll be sent there straight away
Don't make the common mistake of picking up breadcrumb quests for other expansion content yet when you get to your capital

After you level a character to at least 50 the first time you'll gain access to the Chromie Time feature that allows you to scale previous expansion content to your level for the purpose of leveling 10-50 on future characters
If you still want to play older expansion content on a character you've already leveled, however, you can still do that at any time without Chromie Time if you still want the rewards that are behind that content

It isnt really necessary imo, i have like 15 abilities bound to my keyboard, and another 15 on the same keys but with the ctrl modifier
So i have 30abilities/consumables on my keyboard, and 2 extra on my mouse

If you're not using Chromie Time and leveling 10-50 in Legion content, you can't use the dungeon finder to queue for a random group. Instead you'll have to use the group finder tool to make a group or just go there yourself later and solo it when you've outleveled the dungeon

You queue for the content you're synced to. If you're leveling 10-50 without Chromie Time you queue for BfA dungeons. If you're using Chromie Time 10-50 you can queue for the dungeons of the expansion you're synced to. If you're 50-60, you queue for current content Shadowlands dungeons

At level 50 the scaling stops, you exit Chromie Time, and then continue leveling in current content (Shadowlands) 50-60

After you complete the Exile's Reach starting zone and get to your capital city, you get your hand held to the BfA zones for your faction with the questing
I think there should be a disclaimer for new players to not start picking up all of the other expansion breadcrumb quests in the capital, but eh, RPG things

a few weeks ago, in WoW classic, I had accepted the dragonscale leatherworking quest with Peter Galen in Azshara in WOW Classic with my huntress, on Heartstriker (PVP), and started looking for the required materials. By the way, I leveled to 60 and entered the Dark Portal to travel to TBC. There I collected some gold to buy some of the dragon scales in the AH. Yesterday I went to Tanaris to farm the scorpid scales. Now finally I have the 4 required armor pieces, as well as the required number of dragon scales and stand in front of the dragonscale leatherworking teacher and realize that I no longer have the quest. I can only unlearn the dragonscale leatherworking with him, but I can no longer hand over the items to complete the quest. I don't know the entire consequences when unlearning by sure. Don't know if a disadvantage might be an effect. How can I repeat the quest or get it again, or does it not work once I have been to TBC? I'm actually sure that I have not deleted the quest by myself. Thank you very much for your advises or your experience in advance!
P.s. Yes, a ticket with Blizz-Support is open but unanswered since Monday 😭

1) which server shou...
1-Avoid the new player servers. Ideally for more people you'll want a high-full pop server, but you might also want to do some research on a site like wowprogress to find out faction statistics. You don't really wanna be Alliance in a server that's almost all Horde or vice versa, and if you wanna play both sides you'll want a more balanced pop.
2-All race and class and spec combinations are viable for all forms of content until you start pushing the highest difficulties of content such as mythic raiding, but even then a good player on a bad spec will do better than a bad player on a good spec that's on top of the current meta.
3-Retail. Period. Classic is more of a novelty recreation of the earliest parts of the game, but if you want real meaningful progress and modern quality of life improvements as well as more and continued content you want to be on retail

To learn an armor appearance it has to be equipped or soulbound by a class that uses that armor type
It didn't unlock on your hunter because your hunter uses mail. You can equip leather and cloth but it's not what you're supposed to wear
