you could try old raids as they are easy to solo, which also means you'll get a higher chance of getting a piece of gear to drop. If not, you could try group finder for the more recent ones, there should be at least one group :)

For this, you could go to collections > appearance, and then just 'Ctrl' + click on the gear you think is suitable and then just keep trying with every piece until you get a set you desire. You can proceed by mousing over the gear in the appearance window and it will list all the mobs it has a chance to drop from and then you can start farming them

The boost sets are weird like that. They don't show up as completed with the AllTheThings app, even though they appear to be collectible. Nulgar on Wowhead posted this workaround:
"While this Transmog Set was first introduced for the WoD Salvage Yard, it has since been used for the BfA pre-expansion event (the Rootweave items) but the easiest way to unlock this set is to create a Class Trial Druid character.
Simply log into that character once, open the Adventurer's Footlocker to also unlock the weapon appearances. You can then delete this character.
If you're using addons at all, I suggest going to a realm where you don't have characters yet, and disable all addons after creating the character, before logging in.
You can do this for all classes..."
EDIT: Tried this and it worked. However, the armor is class-specific. That means that my druids can mog Springrain but my rogue can't. Speaking of rogues, the Lightdrinker boost armor is pretty badass.
