It's hard to get good food photos (I never know why restaurants have them on menus) but it looks nice. I like cooking but I don't because of the washing up, I need a dishwasher.

Flagship is a really good sharp cedar awesome for sandwiches. The port derby I got for the first time...had a bit of a funk to it that was good...but I'd probably replace it with a smoked gouda if I had to do it again

Yes and no, depends on the smoker, I use wood, and charcoal so I have to babysit it all day, to add more as needed.. An electronic smoker, or pellet smoker, you can set and let them run overnight

@solemn prairie I grew up with that exat style of smoker on the back patio...i have many fond memories of smoked hams, chickens, turkeys, ribs, and beef tenderloins all cooked to perfection by my dad. Honestly i think he picked up smoking meats so he could have some alone time! 🙂

This was a 45 day dry age wagyu rib roast I did over the holidays last year!
@left totem I rub it in oil and a montreal seasoning mix, place it in the oven at 325F for about 2 hours or until it is about 115F internal, pull it our and crank the overn up to 450F, and then cook it hot until the internal is 125F. It gets a nice crust on the outside, and retains all the juices. NOthing too flashy, but no one has ever complained, and i feel like i'm eating at a fancy steak house!

Glad you like it! It was one of those odd moments when I needed to use up a spare ribeye and had some fresh cherry tomatoes and some arugula laying around. Came out really yummy though! Topped it with some balsamic vinegar.

No marinade, I rarely do that to steaks. That's a rub I use on ribeyes and sometimes prime rib. The rest of the color is the fat crisping!

It's red and green capsicum, onions, pepperoni, mushrooms, chilli flakes, oregano, and BBQ sauce drizzled over
The pepperoni mostly melted down into the cheese but you can see one bottom left

It was a mix of a jar of pasta sauce (ran out) and a can of diced tomatoes (mostly just scooping out the sauce in the can and leaving the big bits) to finish it off
other than the bbq sauce which isn't my favorite unless it's like over chicken, I have no objection! You may feed it to me
Making egg salad for sandwiches today, anyone have any unique ways that they make it? I usually add hot paprika to give it a little kick

I can't take all the credit. My brother makes the dough. He's gotten pretty good at mixing up a batch with some really fine pizza flour, yeast sachet, and leaving it covered to rise for a few hours before dinner. If you have the time to make your own dough like that it makes a massive difference though.

Yeast, sugar amd water in a mug to fizz up for 10 mins, then mix up the dough in bowl, amd cover for 2h usually
Yeah my brother does similar, I've seen him do that premix with the yeast when doing it.
Crumbling dried oregano on pizza makes it 10x better imo. We grow a lot of our own herbs in the garden so always have a jar of the basics like mint, rosemary, and oregano.
Pesto pizza base sounds good! We also have garlic home grown so sometimes we crush up and make a garlic foccacia style pizza with oil.

red pesto is more tomato-y if you still want tomato style

Chicken tika masala over a bed of basmati rice with naan. All home made, didnt raise the chickens or grow the rice. But all seasonings were grown by me and the Naan took 3-4 batches to get right. Blisteringly hot cast iron..... the way to go.

You're completely right, it was just an experiment to try different combinations.
I'm not a massive fan of sweetcorn. I think perhaps the fact when it's on the cob, it gets stuck in my teeth and it just makes me not like it at all. But it looks good. I eat really boring things so anything like that looks yummy!

@abstract skiff depending on where you live in the US you can still get really good german foods.
Though tbh nothing produced in America will be as good as the same product in Germany because we allow too much crap in our food.
Since I moved here I couldn't find anything close to German quality. Bread is cheap and too soft. Aged Cheese and Salami is imported and too expensive often. We have international stores here in California but they also charge 4x the price at least for German Chocolate. I often just resort to baking myself around Xmas, I make my grandma's Vanillekipferl (Crescent moon cookies) every year in November but even some of the ingredients are hard to come by unless available on Amazon (such as Vanillezucker)

Apple Bourbon Pork Belly Burnt Ends
Flying Swine Slap Apple Bourbon Rub ( just a placeholder to simplify making your own rub )
6 pounds of Pork Belly
1.5 sticks of unsalted butter ( kerrygold )
1.5 cup Brown Sugar
Honey
Applewood Chunks
Glaze:
1 cup Your choice of bourbon bbq sauce
1/4 cup Apple Juice
1/4 cup Apple Jelly
- Remove skin and cut Pork Belly into 1.5" cubes
- Heavily season each cube with rub
- Place pork on a grated rack
- Heat Smoker to 225
- Smoke pork for about 1.5-2 hours until tender with applewood chunks ( amount varies depending on how much smokey flavor you like )
- Transfer pork to aluminum pan and coat with brown sugar and drizzle honey
- Cut butter into small pieces and scatter in pan
- Cover pan with foil; put back in the smoker for another 2 hours until its about 205f degrees
9)Heat up glaze ingredients on stove on medium/low and simmer till its nice and smooth - Either drain pan and reuse or transfer pork to a new pan and glaze
- Cook for another 5-10 minutes uncovered to caramelize the glaze
- DONE!
