why is chainmail sometimes worn under a gambeson?
in fact it was mostly worn under gamb
than over
i don't really know why but if I had to guess is it's actually more protctive to have the padding over the "harder" surface + makes the maille less heavy since it's being "compressed" and held in place by the gamb instead of only resting on your shoulders (even less with a belt) and that maille works best when tailored to your body, so having a maille shirt that would go over your "standalone" gambeson would be a bit flabby and more expensive since bigger

99% of the time if you're a soldier in 1430 you're gonna buy a helmet made in your timeframe

its just after the transitional period or near peak plate armour period, I dont think ditching a whole style is as cut clear. kettelhelms are even seen much later even tho it both preceeds the bascinet and sallet.
And you'll notice how the style or said kettles change with the time
