Miri it is while sumer is actually one of the best recreations of a medieval song from the 13th century, because how much it survived in manuscripts and such.

sadly a lot of other medieval songs (Media Vita, Le Roy Engloys etc.) are repros from a handful of manuscripts, most of the time its just guesses to what they would actually sound like. So thats something you should look out for when it comes to making songs in game based on irl songs. Anyways, hope the music stuff is going well

As far as I can tell, they wrote their own system where layers of the mesh are erased/colored by damage. It's quite smooth but it's git some artifacts. The deeper mesh layers are muscle and then skeletal.
There are muscles/organ/bones inside Willie at all times, you can see them in camera mode.
There's likely a way to detect wound depth, as with deeper cuts it may trigger a dismemberment. Although it might be tied to the damage sliders, because sometimes they will dismember with barely any wound depth

The organs are in there, so it's more than likely just collision with a sword edge that has velocity or a damage number tied to it.
For arms and legs, I don't think they have artery locations, so that is likely just tied to depth, because I don't think they specifically bleed from locations in the wound with arteries or veins.
But I also haven't paid too close attention where precisely they bleed from, maybe you could experiment and check
