he stabbed into flesh, not the armor, its just clipping because its a videogame. so whatever might happen if you hit a solid object is kind of irrelevant, people still used the technique so the risk of cutting your hand open because you hit their breastplate too hard is probably lower than the risk of not using half swording and getting your whole arm, neck, and torso cut open by their sword.

its small adjustments and you have to keep in mind of how your opponent also has their weapon, but it just takes practice. I'd say put damage to minimal on you so you can learn without dying in one hit and slowly raise the damage till you get comfortable, but there are just funny stuff that happens I've cut my own throat before because I decided to parry
