So hear me out with my crazy take, I think mace and kite shield is the real best weapon combo in Knight tier. Why? The only way you're going down in Knight is a lucky stab to the armpit or blunt damage to the head. Kite shield keeps you completely safe from whatever is the greatest threat, mace will eventually bonk someone and get them staggering. Then you drop shield and hammer them with a two handed grip until they drop.
