Unironically pretty sure that's how knife fighting against spears is approached in historical materials, from what I remember.
Axe is pretty solid too.
Either of the two handed axes are pretty great for control.
Sword or mace is always solid and pretty hard for a spear to counter if you're good with deflections.
Plancon is the same, if you deflect it there's not a ton they can do to bring it around fast enough
so long as you can get in a lethal blow fast.
Practice makes perfect.
I do a lot of commoner tier runs since it's sword v sword like 80% of the time
Very good for practicing swordplay specifically.
And it really forces you to break bad habits that would otherwise be okay with heavier armor since swords just fuck up anyone unarmored really hard even with glancing slashes.
Stand still and let them attack
Dance around them a little to draw out different kinds of attacks
Basically just play with them like a cat for a bit.
Try attacking specific limbs or doing combo parry-into-riposte
Remember to keep your sword in a position where it can meet theirs. You don't have to 100% stick to it all the time, but in most cases you want to be keeping your sword constantly held between you and your enemy so that they have to get past it to get at you. Then you can deflect and bring it around for slashes very quickly when playing defensively.
Lower your mouse sensitivity if you're having trouble holding specific forms, but pay close attention to how you're holding your sword and what kinds of attacks it will make most easy.
Like if you're wanting to go for a stab to the chest, you're gonna want it held out at the enemy's core.
But if you want to go for slashes, high stances are likely better.

It's probably related to the number of entities
And the despawning system they use.
Abyss mode has a super close draw distances where it's probably not accurately calculating entities beyond a short distance outside it.
And it also only does the melty despawn when things are killed.
Instead of just disabled.
Might just be a thing the devs thought was funny and they decided to keep in for a placeholder.
You have to be very careful if using any attacks that would push them away and move away from the plancon as you attack so you don't get pulled into or have it pushed into your back/thigh
