I think the trigger of the bug is based on your window setting.
it seems inconsistent, as I haven't been able to trigger it since.
but setting the game to fullscreen while on dx11 used to cause it for me.
and at one point it did it only for dx12.
but I somehow fixed both...or they fixed themselves.

if you don't, you can increase sensitivity and use ultra small movements.
if you have the ability to customize your mouse dpi, I'd also set that to something that feels comfortable.

I play with 800 dpi, and max sensitivity.

it's not a real inventory, it's basically just a selector for what you have equipped. Any weapon you sheath is in your "inventory" and instead of unsheathing the last one you put away by holding the button, the "inventory" lets you manually choose what to pull out
