Depends on what tier.
For beggar, keep a good distance to land solid hits, not to far but not so close that you end up hugging the guy. Also kick a lot, if u find that sweet distance u can chip away and break his leg by kicking it
For peasant, i highly recommend the pitchfork. Just hold left click and advance. If u miss, just back away and try again. To fend from pitchforks, try your best to dodge or swat away the enemy’s fork.
For commoner, it’s really complicated. Try to get the longest and skinniest sword possible and work with that. If u can outrange them, find that distance that leaves them right at your tip. Otherwise, u can try parrying their attacks.

too far in or too late, and they're usually mid-stab or you don't end up deflecting enough to save yourself
