When stabbing with alt (with swords), pull your weapon in closer to your body as opposed to extending your elbow out. It's much more accurate and stable.

Alternatively If it's a two handed weapon it is recommended to hold right click first, then drag your mouse to aim the weapon. Then from there double click and hold left mouse (you can try alt a little as well but clicking is more stable)
This is a much more stable and accurate stabbing pose, and a proper halfsword thrusting stance.

To practice your aiming, there's two different ways you can keep your FOV.
Third Person- with Low FOV, so you get a closer view.
or alternatively;
First Person- with High FOV, so you get a wide view of your weapon and it's positioning.

1. How do i poke? I can only swing left, right, up and down, but there are a lot of pokey sticks in the game, feels weird not being able to poke with them, am i doing something wrong?
2. How do i effectively get up from the ground? getting up when laying on the back seems easy, just press w, but getting up from the belly and pressing w just makes you crawl, while pressing s and spacebar doesn't help much
3. Would the pen be more superior here than mouse? Sometimes i need to do a clean side to side cut but the weapon actually goes in all sorta directions using mouse

well, if you try and just straight up ram into them chances are you'll be the one getting KOed. its gonna be more of a slow process of backing them up into the fence, then from there you can land whatever strikes/bashes you wanna. super satisfying getting a good strike against the fence cause it deals so much more damage too

also try and cut them off from moving to the sides if they do

yeah my best runs have been with those (and one with a pitchfork), it just feels REALLY RNG. and i strongly dislike that, because the game has felt really skill based so far (except maybe the third greatsword boss, fuck that guy)

ultimate challenge just feels pretty RNG, hope you get good drops of weapons/armor and hope the enemies arent all hyper-aggressive
