1 i think in general dual wielding wasnt popular back then (having a sword as your main weapon and then a dagger in your offhand wasnt uncommon but the dagger was more used as a parrying device than as another method of attack) though we dont have any manuscripts dedicated to dual wielding so that may not be true
2 iirc combat plate armor was actually lighter than you'd expect because you'd often have to wear it for hours on end going to and from battle fields and whatnot, so it needed to be reasonably comfortable to wear for that length of time and offer good range of movement
