Its the other way around, the higher your gore is the higher your chance to decapitate, unlimb, skin opponents is. This is at medium gore.

lots of practice. Turn down your mouse sensitivity in game settings, make your movements short but quick, I used to have my damage to npcs on low while damage to me on high to give me more room to improve while punishing me for messing up.
