a good tip is to keep your weapon in front of you. The game has an auto parry feature that can help you. Works with longswords and one handed weapons

I've discovered I like using the spiked pole as a finesse weapon, especially the one with the bladed head and irregular spikes compared to the one that has a square spiked head and regular row of spikes

Keep it extended near them and it's VERY hard for them to attack around, the spikes can grab both weapons and shields, then once they open up a bit, blade to the face
