If you grab a hold but it's not enough for a clean take down, don't be afraid to release one hand and re-grab. Take your time with aiming where to grab.

Also, timing grabs by using shift to close distance after they swing or t get an angle on the side usually helps.

Sensitivity is preference. Similar to an FPS. But you don't have to swing fast to hit hard.

A lower sensitivity will help you understand whats going on and teach you a bit of control. As you get familiar you can increase the sensitivity.
