Well, the thing is, that's only some people. Souls games are difficult, yes, but they never limit you and are never unfair. They expect you to get good at them. And the feeling when you do get good is immensely positive.
They are designed to make you feel accomplished. Like you can and should keep going even through the difficulties. And it directly teaches that if a method doesn't work for you to find a different one no matter how difficult it is at first because the long term results are worth it.

It doesn't give you an immediate reward. It teaches you a sense of delayed accomplishment that things rarely do.
You beat the game not because you pressed buttons faster than someone else, but because you were simply good at the game.
You learned the bosses attacks. You learned the attack windows and what you could do. You won, and the game didn't assist you.
You were simply better than the game was at beating you.
