many people (including me) skip re1 because it is very very old and has things like fixed camera

if you dont care about the game being very dated and having fixed camera, re1 is best place to start

if you really hate survival horror and want more of an action game, re4 is best
if you really love survival horror and want to suffer and feel desperate for more ammo/healing/etc, re7 is best start (re7 and re8 are an independent story)

for starters the original games are very very different from the remakes/new games for obvious reason

re2, re3 and re4 remakes are fairly similar play style and progressively become more action focused
re5 is very different because it is old and didn't get a remake. plus they tried to put coop into this game
re6 is very different and very disliked, it was a big flop for the series
re7 was a reboot of the series trying to come back from the flop that was re6, it is pure survival horror with new ui, very different from re2-4 remakes
re8 is continuation of re7 but with more action again
